Vegan Burger with apples and beetroot mayonnaise

    SOTO burger patties to taste

    vegan burger buns
  • 2
    small sour apples
  • 1/2 bunch
  • 1 handful
    wasabi peanuts
  • some
    red cabbage, shredded
  • 1
    pre-cooked beetroot
  • 1
    branch thyme
  • 1
    splash lemon juice
  • 100 g
    vegan mayonnaise


Cut the beetroot into small cubes and add together with thyme leaves, lemon juice and mayonnaise to a food processor. Mix until fully combined and creamy. Season with salt and pepper to taste.


Prepare the SOTO burgers according to the instructions on the package. Toast the buns. Wash and drain the rocket. Cut the apples into halves, remove the seeds and cut into thin slices.


Spread some mayonnaise onto the bottom part of the bun and add some rocket and a burger. Top with wasabi nuts, apple slices and red cabbage before adding the top part of the bun.
